Mayonnaise
Today, mayonnaise is a multi-purpose product that is used for sandwiches, salads, and even as ingredients for other food products. Mayonnaise is characterised as an oil-in-water emulsion; however, the ingredients can be divided into four phases: oil, egg, vinegar and slurry (water). The latter phase involves water, stabilisers, preservatives, and flavours. For low fat versions of mayonnaise, and for salad dressing, the slurry contains starch. Consistator® units (low pressure SSHE) are used for the heating and subsequent cooling of the slurry phase.
